10-Minute Vegan Lemongrass Chick’n Peanut Noodles
Creamy, savoury, tangy and full of plant-based flavour, these 10-minute Lemongrass Chick'n peanut noodles taste like more than the time they take. Happy Veggie World Lemongrass Chick'n brings the aromatic, savoury bite, while a quick peanut-lime sauce coats the noodles in creamy, slightly spicy flavour. Make the peanut-lime sauce
In a bowl, whisk together the peanut butter, soy sauce, lime juice, rice vinegar, maple syrup, sesame oil, chili sauce, garlic and ginger if using. Add hot water or noodle cooking water 1 tablespoon at a time until the sauce is smooth, glossy and pourable.

Cook the noodles
Cook the noodles according to the package directions. For a true 10-minute recipe, use fresh udon, shelf-stable noodles or quick-cook vegan ramen-style noodles. Drain and set aside.

Heat the Lemongrass Chick'n
While the noodles cook, heat the oil in a skillet over medium-high. Add the Lemongrass Chick'n and cook for 3 to 5 minutes, stirring often, until hot and lightly caramelized at the edges.

Toss everything together
Add the cooked noodles to the skillet with the Lemongrass Chick'n. Pour the peanut-lime sauce over top and toss until the noodles are evenly coated. If the sauce feels too thick, add another splash of hot water or noodle water until it loosens and coats smoothly.

Finish and serve
Divide the noodles between bowls. Top with sliced green onions, crushed peanuts and a squeeze of fresh lime. Serve immediately.
