Make the mango avocado salsa
In a medium bowl, gently combine the mango, avocado, red onion, cucumber, orange juice, lime juice and cilantro. Season with sea salt to taste. Mix carefully so the avocado stays mostly intact, then set aside while you prepare the Ginger Chick'n.

Cook the Ginger Chick'n
Heat the oil in a skillet over medium-high. Add the Ginger Chick'n from frozen or defrosted and cook for 3 to 5 minutes, stirring often, until heated through. Add a few teaspoons of water as needed while tossing to loosen the sauce and coat the pieces.

Warm the tortillas
Warm the tortillas in a dry skillet, oven or microwave until soft and flexible.
